Now that is how this dish should be done. The fish fell apart in large, moist flakes, protected by a batter that was golden, crisp and remarkably light. The chips were properly fluffy in the middle, although I would have liked a little more colour on them. Plenty of salt and a sharp splash of vinegar made it tremendously satisfying.

The presentation was exquisite: neat, colourful and almost too beautiful to disturb. The rice was soft and slightly sticky, with just enough acidity to complement the delicate fish. A touch of salty sauce deepened the flavour, followed by a sudden burst of heat from the green paste. The freshness of every piece was remarkable.

What a wonderfully fragrant dish. The warm spices came through immediately, followed by a subtle smokiness from the tender pieces of chicken. The sauce was rich and velvety, balancing mild heat with tomato sweetness and a pleasantly tangy finish. It was filling, certainly, but leaving any of that sauce behind would have been unthinkable.

This was less a single dish than a series of small discoveries. One basket contained delicate steamed parcels; another offered something sticky and pleasantly chewy; elsewhere, there were crisp, golden bites with intensely savoury fillings. Even the soft, sweet buns had their place. Sharing everything made the experience as enjoyable as the food itself.

What impressed me most was the balance. The sauce managed to be sweet, salty, sour and savoury without any one flavour taking control. The noodles were soft but still had a little bite, while the bean sprouts and crushed peanuts added a satisfying crunch. A final squeeze of lime lifted the whole dish, making it taste brighter and fresher, and I immediately wanted another forkful.
